Is it possible to hide the sub topics 'fields', 'constructor' and 'members' from toc, so only 'methods' are visible?

There isn't a way to do that by default.  You may be able to create a plug-in for SHFB that modifies the intermediate TOC file to remove the elements that you don't want though.
